Our story

Our humble beginnings start in the spring of 2018. Our Son Austin had a big dream about starting a food truck in the Castle Rock, CO area. This has been a very grteat opportunity to meet residents from our community as well as serving them great authentic Mexican food.

The name Romo’s street tacos was established and now we gladly server the community of Castle Rock delicious and authentic Mexican food.

I love this place. They have made great improvements since first opening. Staff is very friendly and attentive.The nachos are the best around in my opinion.

Pretty good spot. Fresh ingredients and loved the tea. Yes tea. You will be surprised how hard it is to get good gold peak tea at a restaurant. Nachos were very good and caught us by surprise. We will be back.

They'll be closed within a year. Slow service. Food is overpriced. I can get better and less expensive from the chains, without the lame LED rope lights. Live edge tables are beautiful. I hope you can recover that cost at auction when you close.

AMAZING!!! We've been looking for a place that had good tacos in Parker and this is it!! Huge portions and a great price. Service was amazing and genuine. 10/10 will keep going back.

Amazing food! Amazing service! Wait times are longer due to them making everything to order. But so worth it! Opened not to long ago so they are still learning the ropes so mess ups do occur but over all amazing, food service is hard right now. Especially with short staff but just be patient! Recommend trying them out!
